Many years ago a friend of mine Carol gave me this plantain recipe and I want to share it with you.
4-5 large ripe plantains (yellow with a few black spots)
some strong cheese I used a Danish Havarti
some grated parmesan cheese
some liqueur I used Galliano
Please use a shallow dish or flan dish. Peel and slice the plantains in 0.50 cm or 1/4 inch circles. Grease the pie dish with butter or use some cooking spray. Place the plantain circles on the bottom of the dish until it is generously covered. Layer thinly sliced or grated cheese onto the plantain circles. Add another layer of plantains and drizzle your favourite liqueur over the top and layer with cheese and a sprinkle of grated parmesan. Bake in a 375-400 degree oven until the top is golden brown. Serve on the side of your main meal. I served it with flying fish in a white wine and red curry sauce, veggies and basmati rice.
